This EF2 natural Chiroso promises a vibrant and juicy cup, bursting with notes of mango and guava with a refreshing lift of watermelon. Masterfully produced by none other than Jairo Arcila, every step in this coffees process helps to reveal and preserve clean, intense and expressive notes. This is a striking expression of Chiroso, where farmers knowledge and varietal elegance meet considered and tuned fermentation.
→ The process:
In the EF2 Natural Process (Extended fermentation, stage 2), the sorted cherries undergo a dry aerobic fermentation process for 24 hours. During this initial phase, natural microorganisms start breaking down the sugars in the mucilage, unlocking the coffee’s flavor potential. Following this, the cherries are transferred into GrainPro bags for 50 hours of anaerobic fermentation, carefully maintained at temperatures below 22°C to ensure optimal conditions.
