Wush Wush arrived in Colombia from Ethiopia roughly 25 years ago — a quiet lineage that few producers have mastered. Notoriously complex, Paola Trujillos rigorous hand-picking and hand-sorting, washing and pulping techniques produce a coffee cultivated with excellence. Fruity, juicy, floral & fragrant. Steeped in care and layered with complexity.
→ The process:
Grown in soils charactered by volcanic ash, this coffee is harvested following strict ripeness criteria. Thanks to the 30hr underwater fermentation, this coffee continues evolving on the tongue, revealing more with every sip. The parchment was then gently washed and then dried in temperature controlled conditions until ideal moisture content was achieved.

Speaking of lineage, Patio Bonito offers a rich history thanks to decades of coffee growing, care and precision innovation from Paola's mother and Father. Paola has continued this development ensuring Patio Bonitos farm holds a huge range of varietals - not for show, but to continue to develop. This Wush Wush embodies Paolas commitment to moving forward and reflects the wider goal for the farm. It is an example of the meticulous techniques ensuring for a bright and vibrant cup but also serving as inspiration as well as an example for other farms to draw from.
